Amazing introduction into Japanese knives

These Hisamoto INOX knives are great options for those who want a taste of Japanese cutlery without having to spend a lot. The only reason this doesn't get 4 stars is the steel is pretty standard, so the edge retention is nothing to go on about, but these are full stainless which is nice for those who don't have experience really taking care of their knives, or for those who just don't want the 'hassle'. The truly special thing about these knives is the thinness throughout the whole blade, from distal taper, and spine to edge. These are factory made, but they are finished by hand to give some of the thinnest OTB production knives I've ever seen, and when I say thin, I mean like REALLY thin. In that sense, you can get an idea of what Japanese cutlery is all about - that perfect balance of practical utility combined with elegance and design. They are incredibly light, and the Western handle is a familar design for those who may not want a traditional Japanese handle. If you get these, I guarantee that you will love them, but I must also warn you that you will get addicted to specialty knives, and the rabbit hole is very, very deep.
