This kiridashi gets 5 stars for its fantastic value. For you under $70, you get a very well-made poduct that seems like it would be at least twice the price. This thick version is substantial and feels really in nice in the hand, without being cumbersome, in fact, I think it's easier to hold than thinner kiridashis. I love the choice of steel, as shirogami 1 is one of my favorites. It takes a wicked sharp edge, and is easy to get a kasumi finish thanks to the even and wide bevel. I like the kurouchi finish as it provides the practical benefit of some rust protection, but also offers some nice contrast with the bevel and edge. If you're looking to dip your toes into kiridashis, start with this one.
